Stir-Fried Salt and Pepper Dumplings
Ingredients
- 10g salt
- 2g sugar
- 1g ground white pepper
- 1g five-spice powder
- 0.5g ground ginger
- 4 scallions
- 30ml canola or grapeseed oil
- 450g frozen potsticker dumplings (not thawed)
- 285g green beans, trimmed and cut into 2.5cm pieces
- 1 piece (2.5cm) fresh ginger, peeled and finely chopped
- ½ to 1 Fresno or Thai chile, roughly chopped
Instructions
- Prepare the salt and pepper seasoning: Combine the salt, sugar, white pepper, five-spice powder and ground ginger in a small bowl and stir to combine. Set aside.
- Separate the white and green parts of the scallions. Cut the white parts into 2.5 cm pieces and thinly slice the green parts.
- Heat a wok or large 30 cm nonstick skillet over medium-high. Add the oil and potstickers and gently stir-fry for 1 minute, shaking the pan and tossing gently to soften them slightly.
- Add the green beans, white scallion pieces and fresh ginger; season with salt and toss. Add 45 ml water, cover and cook for 2 to 3 minutes. For meat-filled dumplings, cook 1 to 2 minutes longer or follow the packet instructions, adding another 15 to 30 ml water if the skillet dries out.
- Uncover and loosen the dumplings with a flat spatula. Add the green scallion slices, chile and 10 g salt and pepper seasoning, then shake the pan and toss gently to coat.
- Carefully transfer the dumplings and green beans among bowls and top with more of the salt and pepper seasoning. The seasoning is punchy and salty, so add as little or as much as you like.
