Mantije

Ingredients

  • 700g wheat flour
  • 10g salt
  • 15ml neutral oil
  • 400ml lukewarm water
  • neutral oil, for brushing the dough and baking dish
  • 500g fatty beef mince
  • 1 large or 2 regular onion, finely diced or coarsely grated; squeeze out the onion water
  • 80–90ml water
  • 10g salt
  • 2g black pepper
  • butter, for brushing
  • water, for brushing after baking
  • neutral oil, for brushing after baking
  • yogurt, for serving

Instructions

  1. Preheat the oven to 250–270°C convection heat.
  2. Knead the flour, salt, oil and lukewarm water into a dough. Divide it into two pieces.
  3. Shape the pieces into balls and leave them to rest for 5–10 minutes.
  4. Knead the beef mince with the onion, water, salt and pepper.
  5. Roll the dough thinly on a floured surface and brush both sides with oil. Carefully stretch it into a very thin rectangle, then fold the upper and lower edges in once.
  6. Cover the dough with the meat filling and divide it down the middle.
  7. Roll each half thinly from the outside towards the centre, tear off small pieces, roll them into balls and place them in an oiled round baking dish.
  8. Brush the mantije with oil and butter and bake them at 250–270°C convection heat for 30 minutes.
  9. After baking, brush the mantije with water and oil and serve them with yogurt.
