Ham, Cheddar and Chive Protein Biscuits
Ingredients
- 225g cottage cheese
- 60ml milk
- 20g honey
- 30g salted butter
- 200g sliced ham, finely diced
- 115g sharp cheddar, grated
- 30g spring onions or chives, finely sliced; a mixture also works
- 240g strong wheat flour, such as Type 550
- 12g baking powder
- 1g baking soda
- 5g sea salt
- 1g black pepper
- milk, for brushing
Instructions
- Preheat the oven to 220 °C conventional heat.
- Line a baking sheet with parchment paper.
- Blend the cottage cheese and milk until smooth.
- Melt the butter.
- Mix the flour, baking powder, baking soda, salt and pepper in a second large bowl.
- Stir the blended mixture together with the honey and melted butter. Fold in the ham, cheddar and spring onions or chives.
- Add the dry ingredients to the wet ingredients and combine only briefly. The dough will remain crumbly and look slightly dry at first.
- Press the dough together on a floured surface. Roll it to about 2 cm thick, fold both ends towards the centre in sequence, flatten it again and repeat. Roll it lightly and cut it into 6 to 9 pieces.
- Place the pieces close together on the baking sheet and brush the tops with milk.
- Bake for 20 to 30 minutes, depending on their size, until the biscuits are lightly browned and cooked through in the centre.
- Leave the biscuits to cool for 10 minutes before eating.
