Fig, Caramelized Onion & Hot Honey Grilled Cheese

Ingredients

  • 30–45ml avocado oil
  • 1 small small red or white onion, sliced
  • 1 pinch salt
  • water, as needed
  • 15ml balsamic vinegar
  • 30g butter, softened
  • ground cinnamon
  • sugar
  • 2 slices sourdough bread
  • fig jam
  • 55g Gruyère, shredded
  • fresh figs, sliced
  • fresh thyme leaves
  • Havarti, sliced
  • flaky sea salt
  • hot honey
  • balsamic glaze

Instructions

  1. Preheat the oven to 175°C.
  2. Heat the avocado oil over medium heat. Add the onion and salt, reduce the heat to medium-low, and cook slowly until soft, about 10 minutes. Stir every few minutes and add a splash of water if the pan becomes dry. Stir in the balsamic vinegar for 2 minutes, then remove from the heat.
  3. Mix the softened butter with cinnamon and sugar.
  4. Spread the cinnamon butter on the outer faces of the bread and fig jam on the inner faces. Layer the Gruyère, caramelized onions, figs, thyme, Havarti, flaky salt, hot honey and balsamic glaze between the slices.
  5. Cook the sandwich in a skillet over medium heat, pressing it down, until the first side is golden. Flip and cook the second side without burning the bread.
  6. Transfer the sandwich to the oven for 5 minutes, until the cheese has fully melted.
